I decided that the easiest way to breach the time gap is through pictures.
Trust me, you DO NOT want me to try and tell you about everything that has happened in the past six weeks in words or we’ll be here for days.
If you aren’t interested in my absence or (more likely) are a close friend or relative that is pretty up to date on the goings-on in Baileyland, then feel free to jump ahead.
Without further ado…
1. 6 mile hike through Red River Gorge with Cliff, my Mom, and the pups.
2. I got bangs.
3. We saw Old Crow Medicine Show at The Louisville Palace. (It was an AMAZING show! I would definitely see them again).
5. My amazing, wonderful, and loving husband took me to, not only see Matthew Morrison, but to MEET him.
Oh, did I mention that I also met him afterwards?
And, and, and! I also got to tell him about our weight loss and to thank him for the part he, unknowingly, played.
Thank you Cliff. You’re just terrific.
Unfortunately, there have been lots of other, not so awesome stuff that has happened but I want to focus on the great things right now.
As far as the weight loss goes, I’m just happy to report a loss from the last time I posted. The lowest number I have seen on the scale was this morning and it was 207 flat. Considering Halloween AND Thanksgiving have come and gone since the last time I was here, I’ll take that as a win.
But unfortunately I am actually slightly behind my weekly loss that’s required to hit 160 by next July. I was, initially, a little stressed about it but instead of dwelling on it I decided to take action.
Luckily, this new chapter of our journey coincides perfectly with a 12 week Biggest Loser contest at work.
Even though we all know I love a good competition, it really is just good timing. I had already decided that it was time to get back on the wagon, so why not try to earn a little extra $$ while I’m at it.
So. I have a plan. Or, rather, several plans that officially started yesterday. And since accountability never hurt anyone, you will see said plans below.
And here is a the first “before” picture that I’ve ever been happy about. (I picked this outfit so that I could also show off my early birthday present from my grandparents. The shirt and pants are both Under Armour ColdGear Infrared and I LOVE them. Definitely going to keep me warm this winter!)

Now for a little bonus recipe for those of you that made it this far.
**Warning. There is nothing healthy about this recipe. But it’s not “Healthy Tuesday” it’s “Tasty Tuesday” so I think we can sneak one in from time to time.
I made these for a buddy of mine a couple of weeks ago as a thank you gift and they are, literally, the best brownies I’ve ever had. Even the husband agreed and he hates walnuts!
Or, the far more apt name, The Best Brownies on Earth
3 cups milk chocolate chips, divided
½ cup salted butter
3 large eggs
1¼ cups flour
1 cup sugar
¼ teaspoon baking soda
1 teaspoon vanilla
1 cup chopped walnuts
1½ tablespoons milk
Line a 9 x 13 inch pan with aluminum foil and spray with non stick cooking spray. Heat oven to 350 degrees.
Melt 1½ cups chocolate chips and butter in double boiler (IMO it comes out much smoother than using the microwave). Stir until smooth.
Stir in eggs, then add in flour, sugar, baking soda and vanilla. Stir together well.
Spread batter into the greased pan, then sprinkle with chocolate chips and chopped nuts.
Bake for 30 to 35 minutes.
Microwave caramels and milk in a small bowl for about 1 minute. Stir and then continue to microwave, stirring every 15 seconds until all is melted and smooth. Drizzle over warm brownies.
